Apple Cinnamon Cookies
Fall is just around the corner and nothing says fall better then apple and cinnamon. Not only do these cookies taste like fall, they also are healthy. What makes them so healthy? For starters they are vegan and gluten free, and have minimal sugars. These are perfect as a back to school treat that is if they even make it to the lunch bags.
Makes approx. 10-12 cookies
Ingredients:
- 1 cup Almond Meal
- 1 cup Brown Rice Flour
- ½ cup Coconut Sugar
- ¼ cup Arrowroot Starch
- 2 tsp Cinnamon
- ½ tsp Baking Powder
- 1 tsp Baking Soda
- ½ tsp Sea Salt
- ¼ cup Coconut Oil
- ¼ cup Almond Butter
- ¼ cup Maple Syrup
- ¼ cup Apple Cider
- ½ Apple (chopped into tiny pieces)
- 2 tbsp coconut sugar
Directions:
- Mix all dry ingredients together in a large mixing bowl (almond meal, brown rice flour, coconut sugar, arrowroot starch, cinnamon, baking powder, baking soda, sea salt).
- In a small mixing bowl mix together all wet ingredients (coconut oil, almond butter, maple syrup, apple cider).
- Mix dry and wet ingredients together until fully mixed into dough. Preheat oven to 350.
- In a small bowl toss the chopped apples with the 2 tbsp of coconut sugar.
- On a greased baking sheet form 1inch balls of dough and press down to flatten them, and then use your thumb to push in the centers (this is where your chopped apples will go). Continue until all dough is gone and then evenly distribute apples into centers of cookies.
- Place baking sheet in the oven at 350 and bake for 10-12 mins, bake longer if you want cookies crunchy.
- Let cool and eat or store away until later.
