Chocolate Pumpkin Squares
If you’re looking for a delicious vegan and gluten-free dessert, you need to try these chocolate pumpkin squares!
Ingredients:
Bottom Layer
- 1 cup of Pecans
- 2 tbsp of Cocoa powder
- 2 tbsp of Chia seeds
- ¼ cup of maple syrup
- 2 tbsp of grapeseed oil
Directions:
- Process pecans in a food processor until grain size, then add all other ingredients and process until blended.
- Press the mixture evenly into a 9×9 inch greased pan or glass dish. This will be your bottom layer.
Top Layer
- ½ cup of Pumpkin puree
- 2 tbsp of Grapeseed oil
- 1 tbsp of Blackstrap molasses
- ¾ cup of Coconut sugar
- ½ cup of Almond milk
- 1 cup of Brown rice flour
- ½ cup of Arrowroot starch
- 1 tsp Baking powder
- ¼ tsp of Sea salt
- 1 tsp of Cinnamon
Directions:
- Mix all dry ingredients together except sugar (brown rice flour, arrowroot starch, baking powder, salt, cinnamon).
- In a separate bowl mix all wet ingredients together (pumpkin, oil, molasses, sugar, almond milk).
- Then mix dry and wet ingredients together. Stir until completely blended, and then pour evenly into pan/dish over the bottom layer. Sprinkle a half cup of vegan chocolate chips over the top to add more chocolate.
- Pre heat the oven to 350 degrees and let whole dish bake for 25 mins. Take out of oven and let cool for at least 15 mins before cutting and serving.
