Millet Bean Chili

Millet Bean Chili

Ingredients:

  • 1 Medium Onion
  • 2 Medium Carrots
  • 1 Sweet Potato
  • ¼ cup of Millet
  • ½ cup of Brown Lentils
  • 1 ½ cups of cooked Chickpeas
  • 1L of Vegetable Broth
  • 2 cups of Water
  • 2 Tbsp of Chili Powder
  • 2 Tsp of Sea Salt
  • 1 Tsp of Dried Oregano
  • 1 Tsp of Chili Flakes
  • 1 clove of minced Garlic

 Directions:

  1. Dice onion, chop carrots and sauté on medium heat with a tablespoon of grapeseed oil.   Continue to stir until onions are translucent.
  2. Dice sweet potato (scrub before cutting and keep skin on). Add Vegetable broth, water, sweet potatoes, millet, lentils, chickpeas and sautéed onions and carrots to a stock pot. Heat until broth comes to a boil.
  3. Add in chili powder, sea salt, oregano, chili flakes, and garlic to boiling pot. Let everything boil together for 30-40 mins, or until lentils and millet are fully cooked.
  4. Let cool a bit and serve. Or transfer into freezer safe containers and save for another day.
